Locust Honey
Black Locust Honey
Strange Sounding Honey's!

Locust Honey

Locust honey and black locust honey certainly doesn’t sound too appetizing does it! However, you maybe very surprised to know this is quite a delicacy.

What Does This Honey Look Like?

This organic honey is beautiful and very pale in color, just perfect for showing off chunks of honeycomb if added to each jar.

Some refer to it as being almost pale lemon although other varieties of this honey can vary from being almost white, clear and also with a tinge of green.

What Does This Honey Taste Like?

This will surprise you as it did me. It is almost identical to acacia honey, with a delightful, delicate, fruity flavor.

Many people favour this honey as being just perfect for accompanying fresh cheeses. It is said to be lovely with gorgonzala but of course you can experiment with any cheese you like.

If you live in or visit France as I do often there are a huge variety of cheeses, try making up a cheese board with a bowl of this honey ready for dipping your cheese in, delicious.

Because it has a delicate fruity taste it is perfect for adding to desserts as a topping drizzled over them, especially if the dessert is a little on the tart side.

Where does This Honey Come From?

Eastern North America where the black locust tree is widely grown, this is quite a tall tree which can reach 70" in height.

Its blossoms are heady, sweet and strong as the clusters of white blossoms attract the honey bees towards their nectar. The Americans have nicknamed this honey as "American Acacia"

The blossoms are only around for about 10 days and this is always dependant on weather conditions. This tree loves warm sunny conditions.

What is Black Locust Honey?

It is much the same and both of these are popular in most European countries and even in China and Canada.

Both of these honey's are known as false acacia. The honey locust trees will grow anywhere there are warm conditions.

Please don't let the name put you off, this is an excellent tasting honey, it just happens to have an unfortunate sounding name!

How Can You Use Your Honey?

If you are anything like me you'll just dive in to the jar with a spoon and scoop it out but it is perfect for using in so many ways and excellent for cooking sweet honey recipes.
