Honey Bourbon Chicken

Honey Bourbon Chicken # 1
Wash thoroughly and pat dry a chicken breast per person and either dice into chunks or flatten and leave whole. Toss the chicken pieces in seasoned flour until fully coated. Melt some butter and a little oil in a large fry pan over a gentle heat; add your coated chicken turning frequently until browned all over then pop onto some absorbent kitchen paper to soak up the excess fats, leave to one side whilst you make your honey bourbon sauce. Using the same fry pan (this saves on washing up) fry gently together one small chopped onion, a handful of mushrooms and a garlic clove. When they are soft and the onion looks almost transparent add 28 fluid ounces of fresh passata or a couple of large cans of chopped tomatoes, a heaped tablespoon of tomato paste or puree, half a cup of bourbon and a couple tablespoons of honey. Add your chicken pieces to this sauce, cover the pan and simmer gently until the chicken is tender. This usually takes around a half hour. Serve this honey bourbon chicken with pasta or rice and enjoy.

Honey Bourbon Chicken # 2
This is a honey recipe I like to make using my food processor, it’s so much easier. You can use chicken breasts, legs or wings, just be sure to use enough for everyone!Fry enough seasoned flour coated chicken in a little butter or oil until browned slightly all over. Drain on kitchen paper and leave to rest on a plate, you’ll be back to it in no time at all. If you have a food processor or blender this is quicker but not necessary as everything can be chopped and added regardless. Blend together a large green pepper, a small onion, a medium cooking apple, a couple of spoonfuls of lemon juice, a good large spoonful of honey, a good splash of bourbon and blend with half a pint of good chicken stock. Pop your browned chicken into an oven proof dish, pour over your sauce, cover and cook in a low oven for around an hour until chicken is cooked through. Just before serving stir in some plain Greek yoghurt or cream. Serve with boiled rice or potatoes………or actually anything you like or prefer.
Honey Bourbon Chicken # 3
Chop and dice 4 to 6 rashers of smoked bacon, 4 to 6 fresh tomatoes, 2 red peppers and a small onion. Gently fry these in butter and oil with some diced flour coated chicken.Keep tossing and moving them around the pan (like a stir fry) until tender and cooked. Add a cup of plain Greek yoghurt, a spoonful of honey, a good glug of bourbon (about a third of a cup) and a few mixed herbs. Stir these all together until everything is blended and serve with honey roasted root vegetables. To make your honey roasted root vegetables just peel and cut your vegetables into chunks, lay on a hot oven proof tray and drizzle with olive oil. 5 minutes before serving drizzle a little honey over them and return to the oven.
Honey Bourbon Chicken # 4

Dice and flour 4 - 6 freshly washed and dried chicken pieces and set aside on kitchen paper.Chop 2 red onions, a couple of garlic cloves and two sticks of celery. Fry these gently together until soft. In a large pan (use the same one as the chicken). Add half a pint of good chicken stock, 2 teaspoons of mustard (Dijon or English is nice) a couple of spoonfuls of Worcestershire sauce, salt and pepper to taste and as always a good spoonful of honey and a couple of bourbon. Stir altogether, add your chicken pieces and pop into a casserole dish. Cook in the center of a medium heat oven for around an hour. This one is nice served with hot creamy mashed potato.Honey bourbon chicken is extremely versatile and can be made into a quick easy dish to eat for any main meal time including for dinner parties. If you do serve any of these honey bourbon chicken recipes to delight and impress your friends add a little garnish to make it look as special as it tastes. Chopped parsley looks very nice and actually contains more vitamin C than most fruits! You will certainly wow them with the flavors and they will be begging you for the recipe. It’s up to you whether you give it to them or not! A lways buy the very best ingredients to ensure you all benefit from really good food. Adjust your seasonings such as salt and pepper to taste but I personally prefer to let others add a little by sprinkling it on themselves as our taste buds tend to differ. Easy Honey Bourbon Sauce ~ Superb with ChickenThe easiest and best tip for using honey and bourbon and one I use for making into a quick easy meal is to pour half a pint of double cream into a small heavy based fry pan. Cook this over a medium heat stirring all the time to prevent burning until it reduces and thickens. Then add a spoonful of honey, a couple of spoonfuls of bourbon with a small spoonful of green peppercorns. Bring these to the boil and pour it over ready cooked chicken. That particular honey bourbon chicken dish is not one I would recommend eating too often. All that cream! However, for a once in a while dish it is quite heavenly.
