Honey and Lemon Cake
Delicious Lemon Cake Hello Jan
Gosh I have discovered so many things I never knew before about honey and honey bees on your website.
I bake cakes a lot for my family and thought you might like to share my recipe for making a honey and lemon cake. This recipe is so easy and a definite favourite so I hope your family and readers will enjoy it too.
I find it easier and quicker to use a cup for my ingredients and so long as you use the same size cup for everything you can’t go wrong.
2 cups of good white flour
1 cup of a citrus flavoured honey
Half a cup of butter
Quarter of a cup of condensed milk
Three quarters of a teaspoon of baking soda
2 medium eggs
2 tablespoons of fresh squeezed lemon juice and the finely grated zest of 1 to 2 lemons
Put all the ingredients into a bowl and mix with an electric blender or put everything into an electric food mixer until mixed together then pour into a greased deep round or loaf shaped baking tin.
Cook in the oven at 350 degrees F or 180 degrees C for about three quarters of an hour.
Remove from tin when slightly cooled by turning onto a cake wire cooling tray. When cold place it on a plate and cut yourself a slice (or 2)
