Crepes Suzette with Tangerines and Honey
First, this is a great site! What wonderful resources, from beekeeping to learning about the types of honey available! I look forward to receiving your newsletter.
The recipe I'm submitting combines the sweet flavor of honey with the tanginess of tangerines for a delicious twist on the classic crepes suzette. We served this dessert to the judges of the 2009 Citrus Dessert Challenge in Orlando, Fla. and were thrilled to win the title of the Official Dessert of the Citrus Parade. I hope your readers enjoy it as much as we do!
Note: If tangerines aren't available, you may use fresh oranges.
* 12 dessert crepes*
* 4 tablespoons of butter
* 1/4 cup of honey
* Juice of 3 tangerines; zest from one
* 1 tablespoon of lemon juice
* 3 tablespoons of orange liqueur
* Extra whole tangerine for garnish (optional)
Melt butter in large skillet over medium heat. Stir in the tangerine juice, lemon juice, honey, zest, and liqueur. Stirring constantly to thicken slightly and reduce the sauce.
Very delicately add each crepe to the pan one at a time and coat it in the sauce. (We used a fork rather than a spatula for this.) Fold each one in quarters, and arrange three on each plate, repeating until each crepe has been dipped and plated.
For extra flair, add a scoop of ice cream in the middle and extra sauce over the top. Tangerine wedges make a beautiful garnish.
Serve immediately.
Yield: 4 servings (3 folded quarters each)

What a fabulous recipe, it just proves how versatile honey is. Thank you so much for your entry, I though it best to put it into this category as almost any kind of honey will taste wonderful.
